Eric Ripert, the owner and chef at NYC’s Le Bernardin, shows everyone four amazing recipes on the Today show using the Breville BOV650XL Compact Smart Oven.  You can see in the video that Mr. Ripert was very skeptical when his wife wanted to cook a meal in a toaster oven.

It’s very understandable.  The truth is, toaster ovens in the past were under powered, cooked unevenly, and just flat out wasn’t very good at anything.

That’s all changed with Breville Toaster Ovens.  In the video, a professionally train French chef whips up dish after dish and even a desert.  It takes no time at all, and it’s all so simple and delicious.

First he makes a fancy version of a crab cake.  With crab meat, bit of mayo, some chives, lemon juice, bread crumb, spices and salt and pepper, and you are done.  Takes only 8 to 10 minutes.

Then he makes a delicious yet hearty vegetarian dish with portabella mushroom.  It couldn’t be easier.  Remove the stem, peel the skin (I personally leave it on), some garlic slices, herb, olive oil, salt and pepper and you are done.  It’s healthy, tasty and satisfying.

The  third dish will be extremely popular with kids or to serve during games.  It’s baked chicken fingers.  Put salt and pepper on the chicken tender strips, and cover with seasoning (I couldn’t make out what he said in the video), toss in a bit of olive oil, and you got a party favorite without all the extra fat and calories.

Even the desert is easy.  They ran out of time, so you can’t really see the whole thing, but I think the point here is, you can make just about everything you can in a big oven in the Breville BOV650XL.  It takes much less time, much less energy, much less hassle, and the possibility is endless.

Everyone loves bacon.  I know I do.  Most people pan fry their bacon, while a few microwave them.  What they don’t know is using a Breville Toaster Oven is probably one of the best way to cook bacon.  It’s hands free, clean up is super easy, and you won’t get splattered with bacon fat like you would in a frying pan.

In this video, you’ll see bacon getting baked in the Breville BOV650XL.  Even though the process is pretty simple, there are a couple of tips I think you will find useful.

1.)  Line the baking pan with foil.  It makes clean up so much easier.  A neat litttle trick is to crumple up the foil and the spread it out on the pan.  That will create little crevices for the bacon fat to pool, and prevents sticking.

2.)  Make sure the bacon doesn’t overlap.  The parts of the bacon that are covered up will not cook evenly.

3.)  Experiment with the time and temperature.  In the video, he had it at 350 degrees for half an hour.  There are also other recipes that calls for 400 degrees for about 15 minutes.  Since everyone’s using different size bacon, it’s hard to give specific cooking time.  Use this as a guideline and discover what works best for you.

Just make sure you check on your bacon a few minutes before it’s done, just to make sure you haven’t burnt them.  It’s really easy to do since you can see right through the glass door.

4.)  Transfer the bacon onto a plate lined with paper towel to absorb the excess fat.

5.)  Spice up your bacon routine by adding a thin layer of brown sugar on top to make candied bacon.  Or, if you like a little kick, sprinkle some crushed black peppers.

6.)  Don’t throw away the fat.  Bacon fat is one of the best cooking oils out there.  Drain the excess fat in a glass jar.  I don’t mind the little bit of bacon left in the fat, but some people choose to run it through a piece of cheese cloth or a fine strainer.

Want to know why a Breville Toaster Oven is a must have in the kitchen?  Look no further than this easy yet delicious pizza recipe.  It takes no time to heat up the toaster oven, it is super easy to make, and you’ll have dinner ready before the big stove oven is preheated.

This recipe works for both the Breville Bov800XL and the BOV650XL.

To prepare the dough, you can either use store bought, or follow the direction below:

Two 13″ pizza dough
¾ Cup + 2 tablespoons warm water
1 ¾ Teaspoons Quick Rise Instant Yeast
3 Tablespoons Yellow cornmeal (optional)
2 Cups Unbleached all purpose flour
1 Teaspoon Honey
1 Teaspoon Kosher salt

Toppings
Fresh basil and fresh oregano for garnish.
¾ cup torn Bocconcini cheese
½ cup Tomato Sauce
Drizzle with olive oil.

Instructions
1. In a small bowl, dissolve the honey in water. Sprinkle the yeast on top of the water and let stand for 3 minutes. In a medium bowl, mix together the flour, cornmeal (if using) and salt. Pour the water/yeast mixture into the flour and mix to form a ball. Transfer the contents onto a working surface and knead the dough for approximately 7 to 10 minutes or until you have formed a smooth and elastic dough.
2. Grease the bottom and sides of a clean medium size bowl with olive oil (approximately 1 teaspoon).
3. Place the ball inside the bowl; turn it over to grease the underside. Cover the bowl lightly with plastic wrap and set aside. Allow the dough to rise approximately 30 minutes.
4. When the dough is proofed, divide it in half. Stretch the dough to fit the Breville non-stick pizza pan.
5. Spread ½ cup Tomato Sauce and ¾ cup torn bocconcini cheese on the top of the dough. Add fresh basil and fresh oregano for garnish. Drizzle with olive oil.
6. To bake the pizza turn the funtion dial until the indicator on the LCD screen points to PIZZA function.
7. De-select the FROZEN and CONVECTION settings. Bake the pizza for the default temperature time.

For crispier crust, add additional minute.  If you don’t have Bocconcini cheese, just use mozzarella instead.  If you don’t want to make your own dough, just buy it ready made from the store.

This is the beauty of pizza.  You can add whatever you want as toppings.  It’s great for finishing off left overs.  Instead of reheating chicken in the microwave, why not add it on top of a pizza?  It takes no time to make, and it’s waaaay better than rubber nuked chicken.

Aside from being more versatile than a microwave, a toaster oven is much more convenient than a traditional oven.  How, you ask?  Well, a big oven takes forever to heat up.  It also uses way more energy than required.  A toaster oven from Breville is the perfect solution.  It heats up in no time, and it only uses just the right amount of electricity.  It saves you both time and money.

I love this peach blueberry crostata recipe because it’s easy to make, yet the result looks absolutely gorgeous.

First you will make the tart dough.  It’s pretty basic, except she rubs lemon zest into the sugar before she mixes it in.

Second part involves making the filling.  Again, very simple ingredients.  Sugar, hazelnut flour, egg, vanilla, flour and butter.

Since both the dough and the filling needs to be chilled for an hour, I’d suggest you make them both back to back.  That way you don’t have to wait for one to be ready.

The peach and blueberry filling is next.  One thing I find interesting is she adds black pepper in the filling.  I’m not much of a baker, so I was glad to learn some new tricks.

Preheat the oven to 375 degrees and bake for 20 minutes, and turn the oven down to 350 degrees and bake for another 20.

This is a fun and creative take on the traditional lasagna.

Usually when people make lasagna, they make a big huge batch.

It’s great if you are serving a family of 5, but if you are single or a couple, you’ll end up eating the leftover for the next 3 days.

When you want to make smaller portions, a toaster oven, like the Breville BOV800XL is perfectly suited for that.

You can make 4 to 6 of these lasagnettes without having to heat up that big stove oven.  It’ll save you time and energy bill.

First you want to juice some carrots.  A lot of people already have juicers, but if you don’t, you can use a blender.  Chop them up into even smaller pieces, add some water (or even better, some stock), blend and strain.

Secondly, heat the juice and add the spices.  Mustard seeds, coriander, clove and a little bit of cinnamon.  Add some butter and reduce the au jus.

Third step involves using the food processor to chop and blend the fillings.  You don’t have to use the exact same ingredients he uses.  If you are a vegetarian, use mushrooms instead of pork belly.  If you don’t like kale, use spinach instead.  If you don’t have the exact same type of cheese…use what you have in the fridge.  The best part about cooking is you can get as creative as you want.

Fourth step is the assembly.  Unlike the lasagna you are used to, here, you make once serving at a time.  It’s like making a sandwich…a player of the pasta, and a layer of filling…rinse and repeat.

Finally, heat up the oven to 420 degrees for 10 minutes.  Make sure the convection feature is turn on.  If you are using a range oven, it’ll take at least 20 to 30 minutes to pre heat it to 420.  But with the Breville oven, it only takes a few minutes because of its small size.  After 10 minutes, set the oven to broil to brown the top of the mini lasagnas.  Dinner is served!
